Ror-shock I could see, but where's the R that makes it "shark", and what happened to the second R in "Ror"?

Roar-shock is how I've always pronounced it, and I do it with a slight Sean Connery accent. Because can't you imagine him saying "Rorschach"?

Depends on the accent saying the words I guess
I roll my 'r's so I would say 'sharrrk' but an Aussie might pronounce the same word 'Shaaaaack' (awaits beating from Emma), without a distinguishable 'r' sound
I say Ror-shack, with the emphasis on the second syllable, but in truth, I don't know how it would be pronounced elsewhere

Rorschach is a German name. We get the word from the guy who invented those silly ink blot tests. But anyways, it's German and they pronounce things weird. That should be explanation enough
