While toasted cheese is good, grilled cheese always turns out completely awesome (at least if one can cook).

Cheese on a tortilla, folded over. Either cooked in a skillet or directly on the burner (my ex used to do that...damn messy, but good!)

I assume we are comparing a cheese sandwich prepared in a toaster oven versus that prepared in a pan over the stovetop.

As far as the cheese itself, I don't think there is much difference, but the bread will be 'greasier' in the pan-grilled mode.

I refuse to accept "American cheese" as a real cheese. You want cheese? Get some nice Colby Cheddar or a good Monterey Jack for the basics, and work up from there.

Seriously, we're too broke to actually have high end cheeses in our sandwiches. Plus, American cheese serves just fine in grilled cheese. I wouldn't have it any other way. :)
