I was wondering if anyone here had a good, simple recipe for lasagna. I offered to cook dinner for a couple friends and thought lasagna would be a good choice. I've never made it before, and I am not really the most able cook.
I'm checking out my mom's cookbooks, but I think it might be better to ask real people instead...
so any secret recipes that you're willing to share?

I do lazy Lasagna...
3 jars ragu (1 original, 1 garlic, and 1 other of your choice)
ground beef (~500-750g)
2 peppers (one red and one yellow)
1/2-1 onion
noodles
dry cottage chese (big container)
2 pre-shredded mozza
Dice peppers and onion, and fry together with ground beef
Pour ragu into pot and bring it to a slow bubble - keep about 3 tbsp seperate for later
Add ground beef mixture
Stir
At the same time be boiling noodles
drain noodles when not QUITE done - so they're still a little stiff (IE almost al dente - like 5 minutes prior)
after drained place them in a bowl with cold water, oil and salt (cold water so they'll cool from crazy hot to manageable, oil to help them stay seperated, and salt for flavor - optional)
the 3 tbsp sauce use to line a lasagna pan so the noodles won't stick
Lay 1 layer of noodles - overlapping on the edges. You should use 4 noodles per layer. 3 if you're strapped for noodles
layer of sauce mix
layer of the dry cottage cheese
layer of mozza
Repeat until about 3 layers are done (or you're nearing the top of the pan)
On the top layer place a layer of noodles, layer of sauce, and the remaining cheese
Place ontop of a lined cookie sheet (to prevent drippage) in the oven at 375 for about 45 minutes - or until hot all the way through and cheese is crisp and browned on the top edges!

As long as you fry the peppers and onions until they're soft but not charred, and make sure the beef is cooked all the way through, you're fine 
The reason you don't want to over cook the noodles is that they're going to get cooked even more in the oven and you want your lasagna to still have some form once you put it into peices
Beware serving the first peice of lasagna - and don't do it when it's fresh out of the oven - it's super akward... always save that one for yourself so the ones for your guests look good

Essentially all I do is make some noodles, then layer them with sauce, meat, and cheese until I'm satisfied that it's awesome enough. Ricotta is best, though cottage cheese works as well, if you dry it out a bit. Mozarella as well, and definitely on top.
Spinach is also important, as far as I'm concerned.

I follow the recipe on the back of the Lasana noodle box.
It's not real Lasana unless you use Italian sausage. Ricotta cheese is easier to work with than cottage. The only part of Lasana that takes skill is figuring out when it's done. If it's bubbling around the edges and a nice golden brownish color on top, it's done.

Sir Spankspeople, to me spinach sounds good, but the people I'm cooking for aren't so big into the veggies. But I'll keep it in mind if I ever cook for my dad.
