That recipe sounded really good. Though I looked in the cupboard and it appeared that I was out of potatoes and cornstarch. So I tried making it with some alterations. Potato chips, gravy and milk....by the way, don't leave a pot on the stove on high and forget about it. Hey if anyone wants a pot with a hole in the bottom by all means I'll ups it to you.

Note: I did eventually buy the necessary ingredients, it turned out great, my husband was proud that I actually touched the stove and did not injure myself or someone else :)

Edit: Mass grammar and spelling mistakes.

Another thing with potato soup is that leeks go very very well into it, if you want something a little bit more than potatos. (and poblano peppers, too)

i don't have corn starch, i'm wondering if shortening will do...

No, but flour will (just don't add flour to hot liquid, like you can with corn starch)

Teh cornstarch is the thickening agent for the soup. Otherwise you have um...potatoes and watery milk. I don't think flour would work right, you'd then have potato gravy.

Oh god, yes. Probably the best kinds of Potatoes to use is Red bliss, and to cut them into chunks. Leeks you have to watch out for dirt caught in them, so when taking apart a leek, you have to wash thoroughly. Another thing you might want to try is adding some chicken stock, or even better, white wine..
