It is good as queso dip, yea, but by itself is still awesome. You get the full cheese effect without interference from out side sources (e.g. Bread, noodles, GREEN PEPPERS)

Actually, very runny.

That reminds me, how could we forget Maytag Bleu!? That's like God's cheese.

I still have some Stilton in the fridge. There's not much left -- maybe an ounce -- so I've been waiting a little bit for it.

I should make a trip to the cheesemonger nearby.

Granted, I am old school when it vomes to cheese. I like a lot of the standards, provolone, meunster, swiss. Actually, not a big swiss fan. But I do love brie and blue cheese. the veinier and crumblier the better. Feta, parm, etc...

And on the topic of Velveeta. I realize it's more of a "cheese food" but if you just hink of it as a flavor and food in and of itself I enjoy it a lot. It's great for what it does.

It's like complaining that a boca burger doesn't taste like beef and therefore hating it right away. Of course it doesn't taste like beef. It's a veggie burger. but I still like it.

Velveeta is only usable when combined with something else - something else in the Velveeta, not just something to put it on. Velveeta on crackers = nasty. Velveeta melted with some Chile Man salsa for cracker/chip dipping = awesome. I won't even use Velveeta for grilled cheese.

I'm in with the aged & sharp cheddar. The bleu kills me though. All veined cheeses make me hurl, unfortunately. Veined cheese and cilantro are just about the only things I can't eat.

Cilantro? That must be rough, considering that over the last ten years a growing amount of dishes have cilantro in them for no good damn reason.
